2 red heirloom tomatoes, cubed 2 yellow or green heirloom tomatoes, cubed 1 cup seedless watermelon, cubed ¼ cup scallions, diced 1 cucumber, peeled and diced 1 tsp fresh mint, chopped ½ tbsp. fresh basil, chopped 2 tbsp extra virgin olive oil 3 tablespoons aged balsamic vinegar

Kosher sea salt and freshly ground black pepper to taste


Toss the tomatoes, cucumbers, watermelon, scallions in a bowl and mix well. Add in the mint and basil and toss fully.

To make the dressing, whisk the extra virgin olive oil and aged balsamic vinegar together until mixed well. Season with kosher sea salt and pepper.

Toss the salad with the dressing. Season lightly with Kosher sea salt and freshly ground black pepper and serve.
