Avocados are nutritional powerhouses. They’re loaded with fiber and monounsaturated fats, which is rare among fruit and makes them very filling. Avocados are also very rich in potassium, containing even more than bananas. In addition, they contain trace minerals and significant amounts of folate, protein, vitamins B5, B6, C, E and K.
Tomatoes are packed with immunity-boosting vitamin C and lycopene, a potent antioxidant that helps protect our skin from dangerous UV rays. Lycopene also promotes healthy eyesight, improves heart health and has been shown to help prevent chronic illnesses and diseases.
Cucumbers have a high water content that makes them extremely hydrating. They contain numerous antioxidants, including the well-known vitamin C and beta-carotene. Cucumbers also provide antioxidant flavonoids and phytonutrients that may help fight cancer. Their peels hold much of their antioxidant content, so keep them intact to pack the greatest nutritional punch.
